Ground Hog Day?

I know there’s ground beef, and then there’s ground turkey, but do they make ground hog? I don’t know if I’ve ever seen that.

Another thing I don’t know is what ground hogs have to do with February 2nd. I’m curious as to how this whole thing came about. It’s a pagan holiday, of course. Imbolc. One of the major sabbats, one of the crossed quarters, falling between Yule and the Vernal Equinox. A festival of light, bonfires, celebrating the turning point of winter..

But how ground hogs came into play, escapes me.

Incidentally, I read a book once that included a chapter on how to prepare ground hogs. The theory was that ground hogs eat all the same things that cattle eat — indeed, ground hogs are a serious pest on a cattle farm, as they eat supplies and leave holes that cows can get injured in.

Anyways, so the theory was that since ground hogs eat all the same stuff as cows, they ought to taste pretty similar too. So the book explained how to prepare them, and basically how to get ground hog steaks out of a ground hog.

Alas, the theory does not hold up in real life. Not even a little bit.

But like anything, it was an opportunity to learn something new. And now, if I ever refuse to eat something on the basis that it tastes like groundhog meat, understand that I am indeed qualified to make that comparison.

Fortunately this has only happened once, so far.
